Anyone up for a pizza party?

We have been experiencing ridiculously high winds and random rain and hailstorms all week, yesterday's storm was in fact no different from what we've had for the past five days. 

The kids have been getting a little stir crazy, and now their trampoline hasn't survived the onslaught. 

They were feeling a bit blue, moping around when the, doorbell sounded.... It was a months worth of their flour arriving! 

This gave me an idea, a pizza and cake party!

Everyone to their stations! 

Kira was on chocolate cake duty, mixing the ingredients together. 

Sophia was emptying tins of tomatoes, tomato puree together, adding seasonings and herbs to taste under my watchful eye as she's a fan of salt.

Xander disappeared under a plume of flour as he and I tackled the pizza base. 

Fast forward half an hour, the cake was out of the oven and we had the pizza station set up. Xander and I were prepping the bases, Sophia was armed with a ladle ready with the sauce, and Kira was ready with fistfuls of grated cheese. 

Silence then reigned as they were happily chowing down on six mini pizzas between them. 

I had coconut cream left over from the pizza bases (secret ingredient when they can't have yogurt), so I whipped up some chocolate mousse. This is very simple and yummy. Cocoa powder, icing sugar and coconut cream. The cake got smothered. 

Sophia had the nerve to come down with their empty plates and solemnly survey the kitchen (which looked like a cooking hurricane had passed through it). 'Oh mummy it's a bit of a mess in here, you're a messy cook'.

The cheeky young lady walked off with the cake and three plates leaving me to tackle the mess. In my defence, it was my three little sous chefs who had wreaked havoc. Honest! I had a pizza floor. 

When appraising the pizza, please remember it's a rice flour, coconut cream base, with plant based cheese. It's not the prettiest, it does not belong in the same universe as Pizza Hut, Papa John's or Domino's. It is a healthy, ingredient restricted version, the only experience of pizza they will ever really know. It is tasty though I must admit, and a work in progress. We had plenty left over so I have made some pizza prep boxes for next time. 

Other tasty alternatives they enjoy include a mashed potato base or a sticky rice base, which also work. Dad cooks a mean frittata too which makes a great substitute.
